Joseph began his baseball career at a young age and has continued to play the sport to this day. Gallo graduated from Bishop Gorman High School in Las Vegas, NevadaA. During his senior year, he batted.509 with 21 home runs and 80 RBIs in 114 at-bats, helping him set a Nevada high school record for career home runs with 446 at-bats, and he batted.509 with 21 home runs and 80 RBIs during his junior year.

The Texas Rangers selected him in the first round of the 2012 Major League Baseball Draft. After being selected, he declined to attend Louisiana University and instead signed a two-million-two-hundred-fifty-thousand-dollar signing bonus with the Texas Rangers. Joey began his professional career in 2013 with the Arizona League Rangers, where he blasted eighteen home runs and drove in 52 runs in 43 games. That year, he was named MVP of the Arizona League. Later, he was promoted to the Frisco RoughRiders of the Class AA Texas League. He also took part in the All-Star Future Games, winning MVP honors.
