Guidara became the general manager of Eleven Madison Park in 2005, where he and Chef Daniel Humm oversaw the restaurant’s transformation from a French brasserie to a fine dining destination. He and Humm eventually purchased the restaurant from Union Square Hospitality Group in 2011.

Will and Humm debuted the critically acclaimed NoMad New York in 2012, followed by the standalone NoMad Bar in 2014. Furthermore, in April 2017, Guidara and Humm opened Made Nice, a fast-casual restaurant in New York’s Nomad neighborhood.
