He developed an interest in food while on vacation with his family in France; he was on a fisherman’s boat when he tried his first oyster.

He attended the Dwight-Englewood School in New Jersey before enrolling at Vassar College, where he dropped out after two years.

He began working in seafood restaurants before deciding to pursue a career as a chef, enrolling at The Culinary Institute of America and graduating in 1978.

He owned and operated several restaurants in New York City, including One-Fifth Avenue, Supper Club, and Sullivan’s.

He began working as the executive chef at Brasserie Les Halles in Manhattan – at the time, the restaurant was one of the most popular in New York City, with additional locations in Miami, Tokyo, and Washington, D.C.

Anthony worked at the restaurant until 2004 when it went bankrupt and closed in 2017.

In 2000, he released his first cookbook, “Kitchen Confidential: Adventures in the Culinary Underbelly,” which became a best-seller.

In 2010, he released his second cookbook, “Medium Raw: A Bloody Valentine to the World of Food and the People Who Cook.”

His first non-fiction book, “A Cook’s Tour,” was published in 2001, and his second, “The Nasty Bits,” was published in 2006 – some of his other books include “Anthony Bourdain’s Les Halles Cookbooks,” “Bone-in the Throat,” and “No Reservations: Around the World on an Empty Stomach.”
