Marcus Samuelsson was born on January 25, 1971, in an Ethiopian hamlet to Ethiopian parents. Following his mother’s death at the age of three, he and his sister, Fantaye Tsegie, were adopted by a Swedish couple.

Marcus studied at the Culinary Institute in Gothenburg (Göteborg) before working as an apprentice in Austria and Switzerland.

Samuelsson went to the United States in 1991 for an eight-month apprenticeship at Restaurant Aquavit.

He left to work on a cruise ship in Sweden at the conclusion of his tenure there, but returned in 1994 to work under the Executive Chef, Jan Sendel.

Jan died just eight weeks later, leaving a vacancy that, predictably, Mr. Samuelsson was selected to fill.

Marcus Samuelsson: Professional Career

Marcus Samuelsson developed an interest in cooking after seeing his grandma prepare a variety of dishes. She was a chef who showed him how to make gingersnaps, cookies, meatballs, and pickled fresh veggies.

This was the source of his passion and respect for local, fresh cuisine. Marcus stated that his love of spices sprang from his family in Ethiopia.

At the age of 14/15, he worked in a professional kitchen for the first time. His father pushed him to pursue his passion but to be meticulous in his execution.

This has made the Chef more aware of the need to improve himself on a regular basis. Samuelsson also worked at a few small restaurants as well as a local bakery. It’s no surprise that he has a golden touch.
